Kimerud Gin is produced in small batches on a farm in Lier and the botanicals are grown on the property or hand-picked in the northernmost areas of Norway. Gin is distilled five times from potato alcohol in a German "Harnold Holstein" still, and at the end pure Norwegian water is added. For this aged version, the gin matured for six months in a double barrel. This gives the gin unique and particular aromas deriving from Aquavit Havaldsen, a special distillate produced by the Kimerud distillery, and the sweet notes of sherry, which are combined with the delicate aroma of dark sugar and vanilla given by French oak. Kimerud Hillside Aged Gin is therefore a complex but elegant gin with robust herbaceous notes that compensate for the sweeter ones, thus passing from hints of medicinal herbs to gentle hints of vanilla and chocolate. Gin is perfect drunk straight, maybe like digestive, but it is also very interesting used in mixing for cocktail structured or accompanied by ginger ale or tonic water, creating a G&T truly unique.
