The aromatic part of the orange (Citrus aurantium) is the peel that is dehydrated at a low temperature in order to maintain its natural aroma and reduced to small pieces to facilitate its use. The peels can be used for the production of liqueurs and spirits or to make elixirs and bitters to flavor cocktails. The peels can be pulverized to obtain a powder for seasoning cooked or cold dishes.
