The Adnams Distillery, with its award-winning John McCarthy distiller, is located in Southwold by the sea. It works only “grain to glass” (ie it produces its own barley-based alcohol) and distils only in small batches. Fishers Gin is a London dry, then all the botanicals are immersed inside the copper still and are distilled with the one shot method. Spignel, rock samphire, wood avens and bog myrtle are rare botanicals that come from the areas close to the distillery, hand-picked by the forager James and then dried. The harvest is eco-friendly, so all herbs and flowers are re-planted after harvest. This makes each batch of Fishers Gin unique, slightly different from each other.
On the nose Fishers Gin strikes with its spicy scents, while on the palate its unique characteristics are given by a certain marine flavor combined with prevailing herbaceous notes. After all, it represents the expression of the English coasts.
