Zanthoxylum armatum is a rare spice. It has small, very fragrant berries with an incredibly citrus and fruity flavor reminiscent of grapefruit and passion fruit. Timut pepper is so intense that just a pinch (pounded in a mortar) is enough to give a unique taste to cocktails or to flavor white fish and seafood.
