To produce the Irish Glendalough Rose Gin, the master distiller re-distills the Glendalough Wild Botanical Gin with a greater quantity of fruit, flowers, spices and a large quantity of fresh petals of three different types of roses: the Wild Rose of the Wicklow Mountains. , the large and fragrant Heritage Roses and the ancient and precious Damask Rose variety. Given their delicacy, gin is distilled even more slowly than Wild Botanical. Subsequently, the distillate is further infused with rose petals for 16-18 hours in order to intensify the flavor and naturally give the liquid a pink hue.
In this artisan gin, in fact, the notes of rose petals are definitely perceptible and dominant, resulting in a floral fil rouge that combines the balsamic, citrus and spicy notes of the original gin.
