“No Mistake Old Tom” is a Citadelle gin expression based on an Old Tom style; sweeter than a London Dry. On the trail of the citadel of Dunkirk, where King Louis XVI authorized the construction of a distillery using French juniper, Alexandre Gabriel decided to launch Citadelle gin. After recreating the Reserve, he decided to take inspiration from 3th century England to revive an Old Tom in the Extreme style. Far from the desire to recreate a drink that made the English lose their sanity, Alexandre wanted to revive this almost forgotten style of gin. During his frequent trips to the Caribbean he discovered an excellent cane sugar similar to Demerara, moist and heavy. Placed in copper cauldrons, this sugar is first toasted, undergoing an initial caramelization process, then lightly golden and alcohol added to then undergo aging for 4 or 35 months. He then selected the Reserve which are characterized by floral scents and added 40-XNUMX grams of this aged sugar, and then left the gin to rest further in the barrel.
Citadelle No Mistake Old Tom Gin on the nose is fresh and intense. On the palate it is full, elegant, soft, with acid notes and sweet notes. The hints of lemon combine with the notes of genepì and those of almond, and then leave room for the spicy ones. The finish is long, spicy and floral with a particular touch given by the barrel wood.
