Hayman's Gently-Rested Gin draws inspiration from the splendid Gin Palace of the nineteenth century, when letting English Gin rest in barrels of Scotch Whiskey gave a truly unique spicy finish. Although the Gin Palace in London is no longer there, Hayman's wanted to keep this Victorian tradition alive by resting its classic London Dry for three weeks in ex-Scotch Whiskey barrels, so as to let the spicy and peppery notes emerge while maintaining the delicate notes traditional botanicals intact.
Hayman's Gently Rested Gin has in fact a silky and soft body and a unique and peppery balanced finish, with the lively flavors of juniper and coriander giving a traditional English Gin structure, with a Gin Palace twist.
